PKC recently partnered with Oz Architects to renovate the University Memorial Center (UMC) at the University of Colorado-Boulder. The UMC has experienced a significant increase in higher customer satisfaction and quicker throughput thanks to a $2 million renovation to its Alfred Packer food court and adjacent c-store named Baby Doe’s. Porter Khouw Consulting was the lead foodservice consultant on this project.

“Customers are very happy with the new fresh, open floor plan,” says Robin Margolin, UMC foodservice director. “The food looks much better because of the improved lighting. Many returning alumni have had many positive comments, including ‘I can’t believe this is the same place.’” In addition to appealing to customers, the open floor plan makes it easier to accommodate special events with large groups of people that eat at the same time.

Besides renovations to the food court, PKC also redesigned Baby Doe’s so that customers can easily access it from the grill and to improve customer throughput. Prior to the renovation, lines often snaked through the store, particularly during peak meal periods."
