University of Nebraska, Lincoln - Dining Master PlanPorter Consulting conducted extensive market research and completed a dining master plan for the University of Nebraska, Lincoln. Dining Services embraced our recommendations and preliminary design for the Selleck Dining Hall and enlisted us to complete its design. This residential dining venue, which opened in August 2004, features an extensive, state-of-the-art, multi-station servery.

The unique centerpiece of this location is a customer-interactive cooking display station with a sit-down food counter. Patrons can select their food items and watch the entire preparation process. Other stations include an extensive hot entrée area, pizzeria, a New York-style deli, made-to order sub shop, and two enormous salad bars with specialty items and fruit selections. There are also modern self-serve beverage stations with a full variety of hot and cold options.

Porter Consulting designed a support kitchen with a small catering service area and a versatile cooking line that includes many technologically-advanced pieces of equipment. In order to limit cross traffic and congestion, there is one tray deposit area, which links directly to the warewash area. The tray collection area is unique in that it incorporates cutting edge tray accumulation and breakdown areas to achieve maximum production with minimum labor.
