In Spring 2011, PKC was retained by Mount Sinai Medical Center (MSMC) to give overall feedback on the proposed design for a new cafeteria, assess the current foodservice contract and advise on potential enhancements. PKC tested the concepts in the proposed design by speaking with hospital administrators and the foodservice staff and then tested the findings and current habits on a web-based survey that was sent out to the hospital employees. 1,200 responses to the survey were received.

PKC returned to MSMC and presented design enhancements for the new facility, survey results, revenue projections and recommendations to improve the existing contractual relationship with its foodservice provider.

Upon review of the PKC recommendations, MSMC expanded the scope of work with PKC to assist the hospital with competitively rebidding its foodservice contract including inpatient feeding, catering, vending and retail facilities. PKC returned to the 1,000 bed hospital to tour the existing Cafeteria and other retail operations as well as the inpatient feeding facilities and vending areas. Following this visit a set of recommendations was developed to optimize the operations and grow revenues over the next five to ten years. These recommendations were accepted and used as the foundation of the RFP as the required programs bidders would ultimately respond to.
