Our firm was hired as the foodservice design consultant to assist with the design of an effective and efficient enlisted dining facility that would provide flexibility in menu offerings and service styles. The venue was designed for speed of service since the recruits only have between 12-15 minutes to eat at each meal. Two identical serving lines are available so that diners can get their food quickly. Beverage stations are located on the counter near the fast food options in order to expedite service. Receiving, bulk storage and main production of all menu items also occur in this new dining venue. PKC was involved in all phases of design from concept design through to construction administration.
